dc.description.abstractCraft beer is that which is made using traditional methods, i.e., non-industrial methods. Several microbreweries, even using modern equipment and bottling their production, are still considered craft brewers due to the care in their production, ranging from the basic ingredients of beer, through the recipe of preparation, coming to final preservatives, which must be natural and not chemical. Some microbreweries, or “home breweries”, are what we could be called "craft ". They use small equipment that can fit into any site, typically they don’t have bottlers and keep your productions with regular beer bottles and corks. The term "Craft Beer" has a meaning from a product that is produced with care, with more stringent (but not necessarily small) production, which leads to products with very interesting and diverse final results. The homemade beers, those produced at home with limited productions, usually 20-40 liters per batch, can also be considered craft beers. Nowadays craft brewing is popular; it is estimated that the market will grow by 15 % in 2014 in Brazil. Besides manufacturing, many beer consumers, seeking better quality products, are going throw this market, because they want something new, innovative and with better sensory deliveries of "taste & flavor" provided by these products. In view of the niche of new consumers who seek new products and also the personal challenge to create innovative products with an emphasis on craft beers, the proposed work aims the creation of a microbrewery focused on the production of high fermented beers.en
