The monitoring of environmental risks through the use of processes of Information Technology (IT) helps in making decisions, which assists in the proper prevention and destination of the liquid or solid waste. The focus of this research is in the monitoring of environmental risks through IT processes, by a single case study, which, in turn, was made through a qualitative approach, phenomenological paradigm of applied nature. One has used five instruments in the data collect and analysis: Environmental Risk Matrix, Matrix of Governance Arrangements of IT, Interview with questions on the continuation of Environmental Risk Matrix, COBIT Questionnaire, and Documental Retrieval. The results of the research have indicated that the levels of maturity of IT processes correspond to: 4 in level 2 (repetitive), 11 in level 3 (defined), and 19 in level 4 (managed) observed in primary information criteria of COBIT, and one identified that the monitoring of environmental risk (filter cake, ashes, bagasse and vinasse) is low. The TI AI 7 process presented maturity level in the monitoring of environmental risks, for demonstrated the system quality through formalized procedures, organized into test environments, its importance is high and efficient in COBIT’s primary criteria. This process manages, installs and certifies changing solutions in response to needs of the business area. The vinasse showed the higher probability of causing environmental risk; the decision-making rights are shown by the leaders of the business unities. The waste: filter cake and ashes meet legal requirements for obtaining operation license envisaged in CONAMA/237/2007 Resolution and Decree 7007/2006, the remaining waste (vinasse and bagasse) are constraints to this requirement.en
